SPINACH AND TORTELLINI SALAD
Tortellini Pasta Salad
Our family is constantly looking for yummy side dishes that we can add to our meals. Today, I’m sharing one of my personal favorites that we recently found. I’m all about simple these days and this recipe is just that! Being simple, doesn’t have to mean simple taste though. This Spinach and Tortellini Pasta Salad has few ingredients but is bursting with yummy flavor. Its quick and easy to put together and can be served immediately. The recipe called for
- chopped spinach,
- olives
- Parmesan cheese
- cherry tomatoes
We loved the combination of flavors, but next time may add:
- peppers
- cucumbers
- mini pepperonis
With it being so simple and tasty, we know we’ll be making this a ton during the summer for BBQs, potlucks and holiday get togethers. The Italian dressing was so simple but was the perfect flavor for this pasta salad.
EASY Tortellini Spinach Salad
As mentioned above, the ingredients in this salad gave it so much flavor! We may add a few more ingredients next time but may also use fresh spinach instead. We also would love to try a Greek version next time with Greek dressing and the following ingredients:
- Cheese tortellini
- tomatoes
- spinach
- olives
- Feta cheese (instead of Parmesan)
- cucumbers
- pepperoncinis
Spinach & Tortellini Pasta Salad Recipe
This Spinach and Tortellini Salad is so delicious and includes tortellini, chopped spinach, tomatoes, olives, and parmesan cheese covered in Italian dressing. It's simple and perfect for any BBQ or get together.

INGREDIENTS
- 1 9 oz. package cheese-filled tortellini
- 1 10 oz. package frozen, chopped spinach thawed and drained
- 1/2 cup grated Parmesan cheese
- 2 cups cherry tomatoes halved
- 1 2 oz. can sliced black olives
- 1 cup Italian dressing
- salt & pepper
INSTRUCTIONS
- Cook tortellini pasta according to package directions. Rinse under cold water and drain.
- In a large bowl, combine the tortellini, spinach, cheese, tomatoes and olives. Toss with Italian dressing and season with salt and pepper. Refrigerate until ready to serve.

- DIFFICULTY: Crazy Simple
- HOW MANY DOES IT FEED: 8
- ANY CHANGES MADE: used 1/2 of suggested spinach amount and Italian dressing
- ANY SUGGESTIONS FOR NEXT TIME: We liked the Italian dressing, but you can change it up if you'd like.
